  • 1 Tbsp canola oil
  • 1 onion
  • 1 green pepper
  • 2 clove garlic
  • 2 carrots
  • 2 tsp cumin
  • 1 pound extra-lean ground beef
  • 1 can crushed tomatoes
  • 2 cup water
  • 1/2 tsp dried oregano
  • 2 1/2 Tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 can black beans
  • 1 can kidney beans
  • 1 can spicy chili beans
  • 1 dash salt
  • 1 dash pepper

This chili is full of protein and healthy fats to give you all the energy you need for a busy night with friends or a weekend full of winter weather!

Directions

  1. Heat oil in a large pot.
  2. Dice onion, carrots and bell pepper.
  3. Mince garlic.
  4. Drain and rinse black beans and kidney beans.
  5. Add onion, bell pepper, garlic and carrots.
  6. Cook until vegetables are soft, about ten minutes.
  7. Add ground beef and cumin and cook until beef is browned.
  8. Stir in remaining ingredients and simmer for 30 minutes.
  9. Season with salt and pepper to taste.
  10. Refrigerate and warm before eating.
