Three Bean and Beef Chili

  1. Heat oil in a large pot.
  2. Dice onion, carrots and bell pepper.
  3. Mince garlic.
  4. Drain and rinse black beans and kidney beans.
  5. Add onion, bell pepper, garlic and carrots.
  6. Cook until vegetables are soft, about ten minutes.
  7. Add ground beef and cumin and cook until beef is browned.
  8. Stir in remaining ingredients and simmer for 30 minutes.
  9. Season with salt and pepper to taste.
  10. Refrigerate and warm before eating.
