Tomato Basil Stuffed Chicken

This juicy chicken recipe combines the tang of summertime tomatoes and the coolness of basil. Try for family dinner night or to impress your date on a night in!

Ingredients

  • 2 (6 ounce) chicken breasts
  • 1 cup italian dressing
  • 1 garlic clove, minced
  • 1 tomato, diced
  • 1 tsp balsamic vinegar
  • 1/2 tsp or 1 tbsp dried basil or fresh basil
  • 1 dash salt and pepper
  • 1 tbsp oil
  • 2 slices provolone cheese

Directions

SLICE chicken breasts horizontally without cutting all the way though, making a pocket. MARINATE chicken in Italian dressing for 30 minutes up to 2 hours.
COMBINE garlic, tomato, vinegar, basil, salt and pepper in a small bowl.
REMOVE chicken from marinade and DISCARD remaining marinade. 
ADD tomato mixture inside chicken breast and SECURE with a toothpick, if needed. SEASON chicken with salt and pepper. HEAT oil in a large oven-proof skillet over medium-high heat. 
ADD chicken to skillet and SEAR for about 2 minutes on each side, or until browned. COVER skillet with aluminum foil.
BAKE chicken at 375⁰F for 15 to 20 minutes, or until internal temperature reaches 165⁰F.  
ADD cheese to chicken and BROIL on high for 2 minutes, or until cheese is browned and bubbly.
