Mediterranean Cobb Salad

A cobb salad starts with a lettuce base and layers toppings in rows to highlight each ingredient. Combined with Mediterranean flavors, it’s as eye-catching as it is delicious. To take your salad to the next level, we recommend pairing it with a simple Chickpea Salad, linked here, and Greek Vinaigrette (but you can use prepared Greek or Italian dressing, too).

Salad

  • 2 cups chopped romaine lettuce
  • 1 cup chickpea salad
  • 1 cup cooked quinoa
  • 1/4 cup sliced kalamata olives
  • 1/2 cup cherry tomatoes, halved
  • 3 Tbsp. Greek vinaigrette
  • 2 Tbsp. prepared tzatziki sauce
  • 1 Tbsp. prepared hummus

Greek Vinaigrette

  • 1/3 cup olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1/4 tsp. dried oregano
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
