  • 2 cups cooked quinoa
  • 3/4 pound cooked pork chops, sliced
  • 1 cup sliced pineapple
  • 1 cup red cabbage, shredded
  • 1 red bell pepper, chopped
  • 1/2 cup shredded carrots
  • 2 Tbsp chopped green onion
  • 1/4 cup chopped cilantro
  • 1/2 cup low sodium soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp sesame seeds
  • 1/4 tsp grated fresh ginger
  • 1/8 tsp red pepper flakes
  • to taste salt and pepper

Sweet pineapple, salty pork, and a nutty quinoa base. Try a new mix of flavors the whole family can enjoy!

Directions

Combine salad ingredients in a large bowl and set aside.

Whisk together dressing ingredients and pour over salad. Refrigerate until ready to serve.
