Ingredients
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried thyme
- to taste salt
- 1 pork tenderloin (about 1 1/2 pounds)
- 1 Tbsp olive oil
- 1 Tbsp garlic, minced

Directions
Preheat oven to 450°F.
Combine garlic powder, oregano, cumin, coriander, thyme and salt. Sprinkle over pork tenderloin.
Heat cast iron skillet over medium-high heat. Add oil.
Add garlic and sauté until fragrant, about 1 minute.
Place pork tenderloin in the skillet and sear all sides, about 10 minutes.
Transfer tenderloin to the oven and bake for 20 minutes, or until the internal temperature reaches 145°F.
Let tenderloin rest for 3 minutes before slicing and serving.
