Shoulder Tender
- 1 beef shoulder tender (about 12 ounces)
- to taste, steak seasoning
- 1 Tbsp. oil
Finishing Butter
- 1 Tbsp. butter, softened to room temperature
- 1/2 tsp. dried garlic or garlic powder OR 1 garlic clove, minced
- 1/4 tsp. dried rosemary
- 1 tsp. soy sauce, optional
The shoulder tender brings the best of beef in one cut. It’s smaller and more affordable than a traditional tenderloin, yet it’s elegant enough to impress a guest. It packs a protein punch with zero waste.
Directions
1. Combine Finishing Butter ingredients and set aside.
2. Preheat oven to 400°F.
3. Season shoulder tender with steak seasoning. Add oil to a large, oven-safe skillet. Sear steak for 2 minutes on each side. Transfer steak to the oven and roast until the internal temperature reaches 145°, 8–10 minutes. Remove steak from oven and top with Finishing Butter.
4. Let steak rest 3–5 minutes before slicing.
