Preheat oven to 350°F.
Combine stuffing mix, eggs, milk and onion powder in a large bowl until well combined. Stir in ground beef. Transfer mixture to a 5x9-inch loaf pan OR shape into a loaf on a baking sheet and bake until the internal temperature reaches 160°F, 45–50 minutes. Top with mozzarella cheese in the last 10 minutes.
Alternate baking instructions: place mixture in 12 muffin tins. Top with mozzarella cheese and bake until meatloaves reach 160°F, 18–21 minutes.
