- 8 ounces breakfast sausage
- 1/2 cup diced onion
- 1 bell pepper, diced
- 1 Tbsp. oil
- 2 medium sweet potatoes (about 1.5 pounds), diced
- 1 tsp. paprika
- 1 tsp. garlic powder

- 4 eggs

Start your day with a hearty and nutritious sweet potato hash. This vibrant dish features tender, caramelized sweet potatoes, crispy bell peppers, and savory onions, all seasoned to perfection with a blend of spices. Topped with fresh herbs and a sunny-side-up egg, this hash is a delightful balance of sweet and savory flavors, perfect for breakfast or brunch.
Directions
Heat a large skillet over medium-high heat. Brown breakfast sausage until cooked through, 5–8 minutes, and remove from pan. Add onion and pepper to pan and sauté until tender, 5 minutes, and remove from pan. Add oil to skillet.
Add sweet potatoes and 2 tablespoons of water to the pan, cover and cook until potatoes are tender and water is absorbed, 5–7 minutes.
Season potatoes with paprika, garlic powder, salt and pepper, then add sausage and onion and pepper mixture back to the skillet. Make four “nests” in the potatoes and crack eggs into nests. Season as desired and cook until eggs have reached desired doneness, 4–8 minutes.
