Salad
- 4 cups shredded cabbage or coleslaw mix
- 2 cups cooked chicken
- 1 cup shredded carrots
- 1 cup diced cucumber
- 1/3 cup sliced green onions
- 1/4 cup chopped cilantro
- 1/2 cup peanuts or sliced almonds
- 1 Tbsp. sesame seeds
Peanut Dressing
- 1/4 cup natural peanut butter
- 3 Tbsp. rice wine vinegar
- 2 Tbsp. honey
- 1/4 tsp. red pepper flakes, or to taste
- 1 Tbsp. soy sauce
- 1 tsp. sesame oil
- 1 garlic clove, minced
- 1 Tbsp. grated ginger
- as needed, water
The mix of crunchy cabbage, fresh vegetables and a nutty sweet peanut dressing make this salad satisfying and perfect for meal prep (you can even turn it into Peanut Chicken Wraps for the week). For a kick, add a drizzle of hot sauce or Sriracha.

Directions
1. Combine all salad ingredients.
2. For dressing, combine all ingredients, adding water as needed until you’ve reached your desired consistency.
