- 1 Tbsp oil
- 1/2 cup onion, diced
- 1 yellow pepper, diced
- 1 lb. ground turkey or chicken
- 1 tsp garlic, minced
- 1 tsp chili powder
- 1/4 tsp red pepper flakes
- to taste salt and pepper
- 2 cups (about one large potato) sweet potato, diced
- 1/2 cup shredded mozzarella cheese
Heat a large skillet over medium-high heat. Add oil, onion, and bell pepper. Saute until tender, about 4 minutes. Add turkey and garlic to the skillet. Season with chili powder, red pepper flakes, salt, and pepper. Saute turkey until crumbled and cooked through, about 7 minutes.
Add sweet potatoes. Cover and cook until potatoes are tender, about 10–15 minutes.
