BBQ Dry Rub
- 1 Tbsp. brown sugar
- 1 Tbsp. paprika
- 2 tsp. garlic powder
- 1/2 tsp. pepper
- 1/2 tsp. salt
Chicken Skewers
- 1 1/2 pounds chicken breast, trimmed
- 1 cup barbecue sauce
- wooden or metal skewers
Summer Chopped Salad
- 1 (3 count) package romaine lettuce, chopped
- 1 (14 ounce) can corn (or 2 cups cooked, and cut from the cob)
- 1 cup cilantro, chopped (about 1 bunch)
- 1 cup sliced green onion (about 1 bunch)
- 1/4 cup crumbled blue cheese
- to taste cracked black pepper
- to taste ranch dressing
These BBQ Chicken Skewers are layered with flavor from a BBQ Dry Rub and your favorite barbecue sauce. Broil or grill them and serve over a simple chopped salad for dinner in under 30 minutes.
Preparation Notes
If using wooden skewers, soak them for at least 20 minutes in water to prevent burning
Directions
Preheat broiler to high.
Cut chicken into bite-sized cubes and season with Dry Rub ingredients.
Thread onto skewers and baste with barbecue sauce.
Broil chicken until the internal temperature reaches 165°F, 8–12 minutes, flipping and basting halfway through.
Mix salad ingredients together and top with chicken.
