Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup full fat Greek yogurt
- 3 eggs
- 1/2 cup coconut oil
- 3/4 cup sugar
- 1 lemon, zested and juiced
- 1 tsp. vanilla
- 1 Tbsp. poppyseeds
For The Glaze
- 1 cup powdered sugar
- 1 lemon, zested and juiced
This Lemon Poppyseed Bread is bright, fresh and perfect for brunch. Enjoy it as a loaf or muffins!
Directions
Preheat oven to 350°F.
Combine glaze ingredients and set aside.
Mix together flour, baking powder, baking soda and salt. Stir in remaining ingredients.
Pour batter into a 9x5” loaf pan* and bake until a toothpick inserted into the center of the loaf comes out clean, 50–60 minutes. Combine glaze ingredients. Cool completely before adding glaze.
*You can also make these into 12 muffins and bake for 18–20 minutes.
