Meat Experts Tip:

Coat with a spice mixture and grill over direct heat to get a sear before finishing them over indirect heat. As with any chicken, the easiest way to see when the meat is cooked is to pierce it and the juice runs out clear. A more thorough method would be to use a meat thermometer. To do this, place the thermometer in the thickest part of the meat without hitting the bone. Internal temperature should read 165°F.
