- 2 cups chopped romaine lettuce
- 1 cup chickpea salad
- 1 cup cooked quinoa
- 1/4 cup sliced kalamata olives
- 1/2 cup cherry tomatoes, halved
- 3 Tbsp. Greek vinaigrette
- 2 Tbsp. prepared tzatziki sauce
- 1 Tbsp. prepared hummus
Greek Vinaigrette
- 1/3 cup olive oil
- 1 Tbsp. red wine vinegar
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1/4 tsp. dried oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/8 tsp. pepper
